Captain Jack's Peach Pie image

Rum and butter...mmm. A smooth and softly sweet peach pie with lots of layers of distinctive flavor. An original recipe of mine which is the favorite fruit pie in our house.

Time 2h15m

Yield 8

Number Of Ingredients 11

1 (15 ounce) package double crust ready-to-use pie crust
1 cup white sugar
⅓ cup all-purpose flour
1 tablespoon cornstarch
¼ teaspoon ground cinnamon
¼ teaspoon ground cardamom
¼ teaspoon ground allspice
¼ cup butter, melted
8 fresh peaches - peeled, pitted, and sliced
2 tablespoons rum
2 tablespoons milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9-inch pie dish with butter.
  • Press one pie crust into the prepared pie dish.
  • Mix sugar, flour, cornstarch, cinnamon, cardamom, and allspice together in a bowl. Slowly stir butter into the sugar mixture until fully incorporated.
  • Toss peaches and rum together in a separate bowl; add sugar mixture to peaches. Gently toss to coat peaches. Pour peach mixture into pie crust. Top with remaining pie crust; seal the two crust edges together. Cut 4 to 5 slits in the top crust for ventilation. Brush with milk.
  • Bake in the preheated oven for 15 minutes. Lower heat to 350 degrees F (175 degrees C); bake until top is golden brown, about 30 more minutes. Turn off the oven and let the pie rest in the oven as it cools, at least 1 hour.

This pie was a bit too sweet for my taste, but it was still good. I would reduce the amount of sugar in the filling next time.

I've made this pie several times now and it's always a hit. The peaches are always perfectly ripe and juicy, and the crust is flaky and buttery. It's the perfect summer dessert.

This pie was easy to make and turned out great! I used fresh peaches from my backyard and they were perfect. The filling was just the right amount of sweet and tart, and the crust was flaky and delicious.

I'm not a big fan of peach pie, but this one was actually really good. The peaches were sweet and juicy, and the crust was flaky and buttery. I would definitely make this again.

This pie was a disappointment. The peaches were not ripe enough and the filling was too runny. The crust was also soggy.

I followed the recipe exactly and my pie turned out great! The only thing I would change is to use a little less sugar in the filling. It was just a bit too sweet for my taste.

This pie was a hit with my family! The peaches were perfectly ripe and juicy, and the filling was just the right amount of sweet and tart. The crust was flaky and buttery, and it held up well to the filling. I will definitely be making this pie again
