5 (7 ounce) cans shoepeg corn, drained
3 each plum tomatoes, seeded and chopped
½ cup thinly sliced green onions
½ cup chopped red bell pepper
½ cup mayonnaise
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Combine corn, tomatoes, green onions, red pepper, mayonnaise, salt, and pepper in a large bowl.
  • Cover and refrigerate for at least 1 hour before serving.
