Who would think to put Ro-Tel in a pasta salad? This is very flavorful and filling, and it's a healthier meal that's inexpensive (I think it came with some coupons in the mail). Yum!

This pasta salad was a hit at my summer potluck! It was colorful, flavorful, and easy to make. I used gluten-free pasta, and it worked perfectly. I also added some diced cucumber for extra crunch.
