Cajun Pork and Beans image

48 oz crushed tomatoes
48 oz great northern beans
16 oz bushs grilling beans (bourbon style)
12 oz beef broth, reduced sodium
1 large sweet yellow onion
3 medium cloves garlic
1/2 c brown sugar
4 c leftover pork roast, cubed
3 Tbsp cajun seasoning
1 tsp white pepper
2 tsp thyme, dried

Steps:

  • 1. In a large (6qt) crock pot put tomatoes, beans, broth, brown sugar and seasonings. Dice onion and garlic and add to pot. Cube left over pork roast and stir in.
  • 2. Let cook on high for 3-4 hours. Serve with cornbread.
