My mom made this recipe for Christmas 2002. She had nothing written down but I loved it so much I asked her how she did it and she wrote it down for me. All the measurements are approximate so if you find something that works better, let me know!

This pimento cheese is a great make-ahead appetizer. I like to make it a day or two ahead of time so the flavors can meld together. It's also a great way to use up leftover cheese.

I'm not sure what I did wrong, but my pimento cheese turned out grainy and oily. I followed the recipe exactly, so I'm not sure what happened.

I found this recipe to be a bit too bland. I added some extra spices, and it was much better. I think it would also be good with some chopped green onions or bell peppers.

This pimento cheese is a bit too spicy for my taste, but I still enjoyed it. I think it would be perfect for people who like a little bit of heat in their food.

I was a bit hesitant to try this recipe because I'm not a huge fan of pimentos. But I was pleasantly surprised! The pimentos are not overpowering at all, and they actually add a nice sweetness to the cheese. I'll definitely be making this again.
