4 medium russet potatoes
2 tablespoons butter or margarine, melted
2 tablespoons vegetable or olive oil
1 teaspoon seasoned salt
1/2 cup sour cream

Steps:

  • Preheat oven to 450 degrees. Lightly grease a baking sheet. Cut unpeeled potatoes into 1/4-inch slices, but do not cut all the way through. Place potatoes on prepared baking sheet cut-side up. Spread slices apart without breaking. In small bowl, mix butter and oil together, then lightly brush mixture over potato skins and between slices. Sprinkle with salt. Bake 40-45 minutes, or until potatoes are tender and edges are brown. Dollop each potato with sour cream. Makes 4 servings.

I've made these potato fans in the oven and in the air fryer, and they turn out great both ways. If you're short on time, the air fryer is a great option.

These potato fans are also great for dipping. I like to serve them with ranch dressing, sour cream, or even just a little bit of melted butter.

I like to add a little bit of grated Parmesan cheese to the potato slices before I bake them. It adds a nice cheesy flavor.
