BUTTERSCOTCH-PECAN COOKIES image

Number Of Ingredients 10

1/2 c. butter, softened
1 c. sugar
1 egg
1/2 tsp. vanilla
1 1/2 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 1/4 c. chopped pecans
1 (6 oz.) pkg. butterscotch morsels, finely chopped (food processor is necessary for this)

Steps:

  • Cream butter; gradually add sugar, beating until light and fluffy. Add egg and vanilla; beat well. Combine flour, baking powder, soda, and salt; add to creamed mixture, mixing well (batter will be stiff). Stir in the pecans and chopped butterscotch morsels. Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake at 350 degrees for 15-18 minutes. Remove from cookie sheets; cool completely on wire racks. Yield: 5-6 dozen
