Butter Mint Cookies image

I made these cookies a few years ago for our Christmas party. Everyone liked them, and they were so easy to make. I am making these for Christmas this year, and I finally found the recipe again, so I thought I would share it on here.

Number Of Ingredients 5

1 c butter, softened
1/2 c confectioners' sugar
1 1/2 tsp peppermint extract
1 3/4 c all purpose flour
green colored crystal sugar

Steps:

  • 1. In a large bowl, cream butter and confectioners' sugar until light and fluffy.
  • 2. Beat in extract.
  • 3. Gradually add flour and mix well.
  • 4. Roll tablespoonfuls of dough into balls.
  • 5. Place 1 inches apart on ungreased baking sheets; flatten with a glass dipped in colored sugar.
  • 6. Bake at 350° for 12-14 minutes or until firm.
  • 7. Remove to wire racks to cool
