1 cup soymilk
1 teaspoon apple cider vinegar
1 1/4 cups buckwheat flour
2 tablespoons cornstarch
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon canola oil
1/3 cup applesauce
3/4 cup sugar
2 teaspoons vanilla extract
1/4 teaspoon almond extract

Steps:

  • Preheat oven to 350.
  • Whisk together soy milk and vinegar, set aside for a minute.
  • Beat together soy milk mixture, oil, sugar and extracts.
  • Sift in the flour, baking powder, baking soda and salt and milk until no lumps remain.
  • Fill cupcake liners two thirds of the way up and bake for 20-22 minutes.
