Bruschetta With Caramelized Onion and Fresh Basil image

I might as well jump on the Bruschetta Bandwagon! Experiment using local onions in your area! Also, try other similar hard cheeses in place of the Parmesan: asiago, fontina, pecorino romano, etc. From the cookinglight.com website with some changes.

I made this bruschetta with goat cheese instead of mozzarella and it was delicious! The goat cheese added a nice tanginess that balanced out the sweetness of the caramelized onions.

This bruschetta was easy to make and it turned out great! I used a balsamic reduction instead of balsamic vinegar and it added a nice touch of sweetness and acidity.

I found this bruschetta to be a bit bland. I would recommend adding more salt and pepper to taste.

This bruschetta was a bit too sweet for my taste. I would recommend using less sugar when caramelizing the onions.
