Broiled Burgers Italian-Style image

1 1/2 pounds ground lean beef
1 tablespoon butter
1/2 cup finely chopped onion
1 teaspoon finely minced garlic
Salt to taste if desired
Freshly ground pepper to taste
1 red ripe tomato, about 1/2 pound
4 flat anchovy fillets plus some of the oil in which they are packed
4 rectangles sliced mozzarella cheese, about 1/4 pound, each slice about 1/4 inch thick

Steps:

  • Preheat the broiler to high.
  • Put the beef in a mixing bowl and set aside.
  • Heat the butter in a saucepan and add onion and garlic. Cook, stirring occasionally, until wilted. Let cool.
  • Add onion mixture to the beef. Add salt and pepper, and blend well with the fingers.
  • Divide the mixture into 4 equal portions and shape into patties, each about an inch thick.
  • Cut away and discard the core of the tomato. Cut into 4 slices, each about the same size. Sprinkle with salt and pepper. For each tomato slice, cut one anchovy fillet in half crosswise and arrange the halves on the slice in a cross. Brush with a little oil from the anchovy can.
  • Arrange patties on a grill for broiling.
  • Place the rack under the broiler with top of patties about 4 inches from the heat source. Broil 2 to 3 minutes, then turn patties. Place under broiler once more, leaving the broiler door open. Let broil 2 to 3 minutes. Top each patty with a slice of mozzarella. Center one anchovy-topped tomato slice on each patty. Place under broiler and let broil 2 minutes longer with door closed.
