Broccoli Orange Salad image

Great taste and with the mandarin oranges a broccoli salad with a different twist. I've taken this to several potlucks and the dish is always emptied.

Number Of Ingredients 16

1 egg
1/4 c sugar
1 tsp prepared mustard
1/2 tsp cornstarch
2 Tbsp water
2 Tbsp apple cider vinegar
2 Tbsp sour cream
2 Tbsp mayonnaise
1 1/2 Tbsp butter
4 c broccoli florets
1 c salted cashews
1 c swiss cheese, cubed
1 can(s) mandarin oranges, drained
1/2 c dried cranberries, chopped
6 slice bacon, cooked and crumbled
1/2 c chopped red onion

Steps:

  • 1. For the dressing, Combine the egg, sugar, mustard and cornstarch in a medium saucepan. Whisk until smooth. Add the vinegar and water and cook until thickened. Remove from the heat. Stir in the mayo, sour cream and butter. Set aside to cool.
  • 2. Place in a large bowl and toss broccoli florets, cashews, swiss cheese, oranges, cranberries, bacon and onion. Just before serving, pour cooled dressing over salad and toss to coat.
