Broccoli-Mascarpone Soup image

From Bon Appetit, Dec. 2006 under "All the Trimmings" from Betty Rosbottom. This soup looks terrific in the photo. You can make this a day ahead of serving. Just cover and chill. Heat soup over medium heat, stirring occasionally; do not boil. Ladle soup into bowls. Garnish with reserved mascarpone. Sprinkle with chopped chives and serve.

I can't wait to try this soup with different types of cheese, like goat cheese or cheddar.

Overall, I thought this soup was just okay. It wasn't bad, but it wasn't anything special either.

I followed the recipe exactly, but my soup turned out too thick. I had to add more broth to thin it out.

This soup was a bit too bland for my taste. I think it could have used more salt and pepper, or maybe some fresh herbs.

I'm not usually a fan of broccoli soup, but this recipe changed my mind. The mascarpone and Parmesan cheeses added a richness and depth of flavor that I didn't expect. I'll definitely be making this again!

This soup was easy to make and packed with flavor. I especially loved the crispy shallots on top. They added a nice textural contrast to the creamy soup.

I love broccoli cheddar soup, so I was intrigued to try this recipe with mascarpone instead of cheddar. It was equally delicious! The mascarpone added a touch of elegance and creaminess that made this soup feel special.

Broccoli mascarpon soup was a delightful surprise! The creamy texture and subtle sweetness of the broccoli paired perfectly with the richness of the mascarpone. I followed the recipe exactly and it turned out perfectly - even my picky kids loved it!
