Number Of Ingredients 11

1.25 lb broccoli, fresh stalks, peeled and diced
4 c chicken broth
1 onion
2 Tbsp butter
1 tsp salt
2 tsp curry powder
"just a pinch" of pepper
2 Tbsp lime juice
8 slice lemon, optional
1/2 c sour cream
1 Tbsp chives, optional

Steps:

  • 1. Place the cut broccoli in a large saucepan along with the broth, onion, butter, salt, curry powder and pepper; Bring to a boil.
  • 2. Reduce heat and simmer, covered, for 8 to 12 minutes or until broccoli is just tender.
  • 3. Place about 1 1/2 to 2 cups of the mixture at a time into a blender container; Cover and blend until smooth.
  • 4. Pour into bowl or another large pan; Repeat with remaining mixture - BE CAREFUL. THE HOT LIQUID MAY SCALD YOU.
  • 5. Stir in the lime juice.
  • 6. Now you can either cover and refrigerate at least 4 hours to serve cold (great in warm weather), or you can go right ahead and serve it hot (great in cold weather).
  • 7. Once ladled out, you can garnish with a thin slice of lemon, a small dollop or sour cream, and a sprinkling of chives.
  • 8. NOTE: You can refrigerate unused portions for serving later, but it doesn\'t keep well for long.

I would give this recipe a 4 out of 5 stars. It was easy to make and the flavor was good, but it was a bit too thick for my taste.

This soup is a great way to use up leftover broccoli. It's also a healthy and affordable meal.

I'm not a big fan of broccoli, but this soup was surprisingly good. The broccoli flavor was mild and the soup was very creamy.

I followed the recipe exactly, but my bisque came out too thick. I had to add more milk to thin it out.

The bisque was a bit bland for my taste. I think I would add more salt and pepper next time.

This soup was delicious! I used fresh broccoli from my garden, and the flavor was amazing. I also added a bit of shredded cheddar cheese to the top, which gave it a nice cheesy flavor.

I've made this bisque several times now, and it's always a crowd-pleaser. It's the perfect comfort food for a cold winter day.

This broccoli bisque was a hit with my family! The flavor was rich and creamy, and the broccoli was cooked perfectly. I added a touch of garlic and a sprinkle of cayenne pepper to give it a little extra kick.
