BROCCOLI BACON QUICHE FOR 2 image

Sometimes it's hard to do quiches on a smaller scale, but these individual quiches are quick & easy.

Number Of Ingredients 8

1/2 c fresh or frozen broccoli florets, thawed & drained
1/2 c shredded swiss cheese
1-2 bacon strips, cooked & crumbled
2 eggs
1/2 c half 'n' half cream
1/8 tsp salt
dash(es) garlic powder
dash(es) lemon-pepper seasoning

Steps:

  • 1. Divide the broccoli, cheese & bacon between two 5" pie plates coated with nonstick cooking spray. In a small bowl, whisk the eggs, cream, salt, garlic powder & lemon pepper. Pour over bacon.
  • 2. Bake, uncovered, at 350^ for 15-20 minutes or until a knife inserted near the center comes out clean.
