Number Of Ingredients 14

1/2 cup tomato juice
1 1/2 cups instant couscous
1/4 cup olive oil
1 cup fresh or canned cooked chickpeas
1 1/2 cups diced tomatoes
1 cup peeled, seeded and diced cucumber

Zest of 1/2 lemon
3 tablespoons lemon juice
2 cups tightly packed mint leaves, finely chopped

I'm not sure if I did something wrong, but my salad turned out mushy. I think I may have overcooked the bulgur wheat.

I had a hard time finding bulgur wheat at my local grocery store. I ended up using quinoa instead.

The salad was a bit bland for me. I would recommend adding more herbs and spices to taste.

I found the salad to be a bit too lemony for my taste. I would recommend using less lemon juice next time.

I'm not a huge fan of bulgur wheat, but I really enjoyed this salad. The dressing is so good that it makes the bulgur wheat more palatable.
