Very easy to make ahead and freeze. Pop one or two in the microwave on busy mornings and you're out the door in seconds!

Time 30m

Number Of Ingredients 6

1 can(s) biscuits, 10 count, small
4 eggs
3 Tbsp milk
1/3 c cheddar cheese, shredded
1 c cooked sausage, bacon or ham
salt & pepper to taste

Steps:

  • 1. Preheat oven to 400 degrees. Whisk eggs and milk together along with a pinch of salt and pepper. Roll out each biscuit until it's slightly bigger than your muffin tin. Spray the muffin tin with cooking spray and push one biscuit into each muffin cup - being sure to push it all the way down and up the sides. Divide the meat and cheese evenly in each of the biscuit cups. Pour egg mixture in, until 2/3 full. Don't overfill. Bake for 10 to 12 minutes or until biscuits are golden and eggs are set.
  • 2. I used sliced ham from the deli in these. You could also make these savory by adding taco seasoned meat and salsa to the eggs and cheese.
