I make this all the time and take for the people at my office. I use different vegtables all the time - mushrooms and spinach, etc. You can omit the sausage and keep it strictly veggie. Great for brunch or even a quick dinner. This is one of those recipes you can easily make your own. I hope you enjoy it as much as I do.

Steps:
- 1. Brown sausage and transfer to plate with paper towel to drain. Sauté onion, red bell pepper and green bell pepper in remaining sausage oil until crisp tender - about 3 - 5 minutes. The veggies will cook through all the way when you bake
- 2. Place tater tots in the bottom of a lightly greased baking dish. I usually sprinkle seasoned salt over the tots if they are not already seasoned. Layer sausage over the tots. Layer the onion and pepper mixture over the sausage.
- 3. In a bowl mix the eggs, half and half, salt, pepper, mustard and garlic powder - mix well. Pour the egg mixture over the tots, sausage and veggies. Cover the entire mixture with the cheese.
- 4. Allow to sit over night in the refrigerator. Bake at 350 for 45 minutes - uncovered. I allow to cool for 5 minutes before slicing and serving. I usually cover mine in salsa. Hope you enjoy!
