Breakfast Casserole image

This is my husband Mike's recipe.

Number Of Ingredients 9

1/2 lb breakfast sausage
1 c frozen hash browns
1/2 can(s) rotel tomatoes with green chiles
1 c milk
4 eggs, beaten
1 c biscuit mix
1/4 c diced onion
1 c cheddar cheese, shredded
paprika

Steps:

  • 1. Brown sausage in a skillet, crumbling as it cooks. Remove from heat.
  • 2. Microwave hash browns on high for 3 minutes. Add potatoes and tomatoes to the sausage. Set aside.
  • 3. In a bowl, combine eggs, milk and biscuit mix.
  • 4. In a 9 x 13 inch baking dish, spread sausage mixture on the bottom.
  • 5. Sprinkle the onion on top of sausage. Sprinkle half the cheese over that.
  • 6. Carefully pour the egg mixture over the sausage mixture. Sprinkle the remaining cheese over the egg mixture. Sprinkle lightly with paprika.
  • 7. Bake at 400 degees for 25 minutes or until done. OLet stand 5 minutes.
  • 8. Cut into squares and serve.
