Steps:
- 1. Mix the sugar, oil, 5 spice, rice wine, oyster sauce, soy sauce, dark soy sauce, and cornstarch. Pour over chicken and let marinate at least 2 hours to overnight.
- 2. Add some oil to the skillet. Add the ginger and garlic and saute for 1 minute. Add the chicken and brown on both sides.Remove the chicken to a plate. Add the mushrooms and cook until browned.
- 3. Add the chicken back to the skillet with any juices accumulated. Add water just enough to cover the chicken. Bring to a boil and reduce to a simmer and simmer about 15 to 20 minutes until chicken is done and sauce thickened.
- 4. Garnish with scallions and cilantro
