BOW TIE PASTA WITH ASPARAGUS image

Number Of Ingredients 10

2 cups bow tie pasta
bunch of asparagus, chopped into 1 inch pieces
1/2 medium onion thinly sliced
1 tsp lemon zest
1 tbsp fresh lemon juice
2 cloves garlic, finely chopped
parmaesan cheese for garnishing
salt
pepper
oil

Steps:

  • Boil the pasta, this should take about 8 to 10 minutes. In the mean-time, heat a pan with some oil, and add the asparagus. Cook for about 3 minutes. Once done, keep the asparagus aside. In the same pan, add garlic and onion and saute them till they are cooked. Add lemon zest, juice and asparagus to the pan and turn off the heat. Keeping some of the pasta water, add the pasta to the pan and mix it, adding pasta water as needed, and seasoning with salt and pepper. Garnish with some shaved or shredded parmaesan cheese. Enjoy!
