Yield Serves 8-10

Number Of Ingredients 8

3 eggs, slightly beaten
1 cup sugar
1 cup dark corn syrup
1/2 tsp. vanilla extract
1/2 cup (1 stick) unsalted butter, softened
1/4 cup Bourbon (or whisky/ scotch)
2.5 cups pecan halves with broken pieces from bag
1 unbaked pie crust (9 inch)

Steps:

  • 1. Preheat oven to 350 degrees. 2. In medium saucepan, bring corn syrup and sugar to a boil. 3. REMOVE from heat and then add the bourbon and butter until blended and butter is completely melted. Let cool 5 minutes. 4. In large bowl, mix eggs and vanilla. Slowly add cooled bourbon mixture while mixing constantly. 5. Stir in pecans. 6. Pour into pie crust and bake for 50 to 60 minutes, or until pie sets. To test doneness, pie should be firm except for middle circle, and knife inserted halfway down comes out clean. Cool on wire rack.
