BONNIE'S HERBED NEW POTATOES image

We love these little red potatoes because they are easy and fast to prepare. They are also delicious seasoned with a decadent sauce of butter, garlic and dill. Enjoy! The photo is my own. Recipe courtesy of Vi Neiding.

Number Of Ingredients 8

enough red potatoes for 4
1 tablespoon butter softened
1 tablespoon sour cream
1/2 teaspoon dill weed
2 teaspoons minced chives
1/4 teaspoon salt
1/8 teaspoon pepper
squeeze of lemon juice

Steps:

  • 1. PREPARE THE POTATOES If the potatoes are large, quarter or cut them in half. If they are small, peel a strip of peeling from around the potato, leaving the rest of the skin on. Place in a sauce pan and cover with water, bring to a boil, lower heat to simmer for about 20 minutes or until done but not falling apart.
  • 2. MAKE THE SAUCE In a small bowl, combine all the remaining ingredients and mix well. Set aside.
  • 3. SERVE Drain the hot potatoes, add the sauce and toss gently and place in a serving bowl. Enjoy!
