BOB'S RED MILL GOLDEN CORNBREAD RECIPE MODIFIED FOR HYDE-CAROOM FAMILY image

Yield 6 big muffins

Number Of Ingredients 8

1 cup Bob's Red Mill 100% Stone Ground Cornmeal (organic)
1 cup Bob's Red Mill 100% Whole Wheat Pastry Flour
1/2 tsp Salt
4 tsp Baking Powder
1 Tbsp Sugar (optional we didn't use it)
1 Egg
1 cup Milk
1/2 cup butter or margarine (we substitued Stoneyfield Fat Free Vanilla yogurt but you can use applesauce too)

Steps:

  • Sift together dry ingredients into bowl. Add egg, milk and butter (or substitute). Beat until smooth, about 1 min. Do not overbeat. Bake in a greased 8 inch square pan (we had to use pie pans)for 20-25 minutes at 425 degrees. Serve warm.
