Blueberry Coffee Cake image

This is a favorite of my husband's to take to church for men's breakfast on Sunday a.m. He always brings back an empty dish (sometimes it's even washed.) It's very easy and quick to put together.

Number Of Ingredients 4

1 can(s) grands butter biscuits (off-brand is fine, but you need the large biscuits)
1 stick melted butter
1/2 -1 c fresh or frozen blueberries
a mixture of cinnamon and brown sugar to taste

Steps:

  • 1. Preheat oven to 350 degrees. Cut large biscuits in quarters. Have melted butter in one bowl and cinnamon/sugar mixture in another bowl. Use a 9 inch square or round baking dish that has been sprayed with cooking spray. Dip each quarter of biscuit first in butter and then in cinnamon/sugar, coating all of biscuit well. Arrange in baking dish until all of biscuit quarters have been used. Arrange blueberries on top, mashing down into biscuits just a litle with hand or a spoon. (If you want to take the time, you can cut blueberries in half.) Drizzle any leftover butter on top. Bake for 20 minutes or accordingly as your oven temperature allows.
