Blueberry Buckle image

This is a breakfast favorite in our house. Enjoy this warm with a bit of fruit salad and a nice cup of coffee.

Number Of Ingredients 13

3/4 c sugar
1/4 c butter, softened
1 large egg
1/2 c milk
2 c all purpose flour
2 tsp baking powder
1/2 tsp salt
2 c blueberries, fresh or frozen, rinsed and thoroughly dried.
TOPPING
1/2 c brown sugar, firmly packed
1/3 c all purpose flour
1 tsp cinnamon
1/4 c butter, softened

Steps:

  • 1. First make cake batter. Combine sugar, butter and egg. Add milk. Set aside.
  • 2. Sift together flour, baking powder and salt. Combine wet and dry ingredients just until combined.
  • 3. Fold in blueberries. Pour into a 9" square pan.
  • 4. Mix topping ingredients together using pastry cutter until medium crumbs form. Sprinkle over unbaked cake.
  • 5. Bake at 375 degrees for 30 minutes. Serve warm.
