This is a great little appetizer you can whip up in no time especially when there are unannounced guests. I usually have the ingredients on hand. You can garnish the celery pieces with almonds if you like.

- Press Roquefort cheese through a sieve. Combine Roquefort cheese, butter, and sherry in a bowl and stir until smooth. Fill cheese mixture into a pastry bag with a star nozzle and fill celery pieces with cheese mixture.
