1/2 lb ground beef
1/2 lb ground veal
1/2 lb ground pork
1/2 cup diced yellow onion
1/4 cup diced celery
1/4 cup chopped parsley
3/4 cup fine dry breadcrumb
1/2 cup bloody mary mix (or spicy vegetable juice, such as V8)
1 large egg, beaten
2 -3 tablespoons vodka
1 teaspoon Worcestershire sauce
Tabasco sauce, to taste
1 teaspoon chili powder
1/2 teaspoon celery seed
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
celery rib, for garnish
1 (8 ounce) can tomato sauce
1 -2 teaspoon vodka
1 teaspoon Worcestershire sauce
1 teaspoon prepared horseradish sauce
Tabasco sauce, to taste
1/4 teaspoon salt
fresh ground black pepper

Steps:

  • Preheat oven to 350°.
  • In a big bowl, combine the first 16 ingredients (ground beef through black pepper); mix well.
  • Divide the mixture evenly into 4 individual round loaves.
  • Place into a lightly sprayed 8x8 inch glass baking dish.
  • Bake about 40 minutes, until the loaves are firm and the top is lightly browned.
  • Let stand 5-10 minutes.
  • While the meatloaves are baking, make the sauce: in a small saucepan over medium heat; mix together the sauce ingredients.
  • Cook until flavors are blended and sauce is warmed through, about 5 minutes.
  • To serve: pour some of the warm sauce on 4 individual plates.
  • Place meatloaves on top of the sauce and pour more sauce over.
  • Garnish with celery sticks, if desired.
