BLANQUETTE DE VEAU image

Number Of Ingredients 11

1 1/2 lb d'épaule de veau
4 tasse de bouillon de poulet
1 cuillère à thé de sel
1/3 de cuillère à thé de thym
1 feuille de laurier
20 petits oignons
4 carottes en juliennes
4 cuillère à table de beurre
4 cuillère à table de farine
4 cuillère à table de jus de citron
3 jaunes d'oeufs

Steps:

  • Dans une cocotte mettre le veau, le bouillon, le sel, le thym et la feuille de laurier. Laisser mijoter 1h1/4. Ajouter les oignons et les carottes et faire cuire 15 minutes. Prélever 2 tasses de liquide. Faire fondre le beurre dans une petite casserole, ajouter la farine. Ajouter lentement les 2 tasses de liquide et remuer jusqu'à épaississement. Mélanger les jaunes au citron et incorporer dans la sauce. Ajouter la sauce au veau. Ajouter le poivre de cayenne
