Steps:
- Dans une cocotte mettre le veau, le bouillon, le sel, le thym et la feuille de laurier. Laisser mijoter 1h1/4. Ajouter les oignons et les carottes et faire cuire 15 minutes. Prélever 2 tasses de liquide. Faire fondre le beurre dans une petite casserole, ajouter la farine. Ajouter lentement les 2 tasses de liquide et remuer jusqu'à épaississement. Mélanger les jaunes au citron et incorporer dans la sauce. Ajouter la sauce au veau. Ajouter le poivre de cayenne
