Black-Eyed Pea Sausage Stew image

My husband makes sure we have this every New Years Day and insists everyone has at least one serving or at least tastes it to have their black-eyes peas! My best friend has even won contests using this recipe!

Number Of Ingredients 13

1 pkg 16 oz. smoked sausage links, halved lengthwise and sliced
1 small onion, chopped
2 can(s) 15 oz. black-eyed peas, rinsed and drained
1 can(s) diced tomatoes, drained
1 can(s) tomato sauce
1 c beef broth
1/4 tsp garlic powder
1/4 tsp cajun seasoning
1/4 tsp pepper
1/8 tsp salt
1/8 tsp cayenne pepper
1/8 tsp hot pepper sauce
1-1/2 c frozen corn, thawed

Steps:

  • 1. In large skillet, cook sausage and onion over medium heat until meat is lightly browned; drain.
  • 2. Stir in the peas, tomatoes, tomato sauce, broth and seasonings. Cook and stir for 10-12 minutes or until hot and bubbly.
  • 3. Stir in the corn; cook 5 minutes longer or until heated through.
