Black Bottom Cupcakes image

I don't know where this recipe came from, but my mother made this when I was growing up. It is still a favorite. Yes, there really are no eggs in the cake part of the cupcake. It surprised me too.

Number Of Ingredients 16

FILLING
8 oz cream cheese, softened
1/8 tsp salt
1/3 c sugar
1 egg
6 oz semi-sweet chocolate chips
BATTER
1 1/2 c all purpose flour
1 c sugar
1/2 tsp salt
1/3 c canola oil
1 tsp vanilla extract
1 tsp baking soda
1/4 c cocoa, unsweetened
1 c water
1 Tbsp vinegar

Steps:

  • 1. Preheat the oven for 350 degrees.
  • 2. Beat together cream cheese, sugar, egg and salt. Add chocolate chips. Set aside.
  • 3. Beat all batter ingredients together until blended.
  • 4. Place cupcake liners in regular muffin/cupcake pan. Fill cupcake liners 1/3-1/2 full. top each with a heaping teaspoon of cream cheese filling.
  • 5. Bake at 350 degrees for 20-30 mintes.
