BLACK BEANS AND RICE image

Yield Makes 6 servings

Number Of Ingredients 9

1-2 tbl. olive oil
1 onion chopped
1-2 cloves garlic, or 1/8 tsp. garlic powder
1 tsp. oregano
2 cans drained and rinsed black beans
1 can stewed tomatoes, Mexican style
1 1/2 cups instant brown rice, or 2 cups cooked brown rice
2 cups water if using instant rice, 1 cup if adding cooked rice
Optional: dash of red pepper flakes and dash of hot sauce, such as Tabasco

Steps:

  • Heat oil in a large (12") skillet. Add onion and saute until soft. Add garlic (or garlic powder) and cook for a minute or two. Add oregano. Add stewed tomatoes, beans and water. Bring to a boil and add rice. Cook, covered until rice is cooked through. If wanted, add pepper flakes and/or dash of pepper sauce.
