BLACK BEAN SALAD WITH FETA image

Yield Makes 6 servings.

Number Of Ingredients 10

2 15-ounce cans black beans, rinsed and drained
1/8 to 1/4 cup olive oil
4 Tbsp. red wine vinegar
1/4 cup chopped fresh parsley
1 tsp. dried oregano
1/2 cup cucumber, diced
2 scallions, chopped
1/4 lb. feta cheese, crumbled
2 plum tomatoes, diced
Fresh ground pepper

Steps:

  • In a serving bowl combine black beans, olive oil, vinegar, parsley, oregano, cubmber and scallions. Mix well and marinate for at least one to two hours. Just before serving add feta, tomatoes and fresh pepper. Toss and serve.
