Black Bean & Pumpkin Chili image

This is my kind of chili - thick and hearty. Try sweet potato or butternut squash instead of pumpkin, and serve over quinoa, barley, brown rice or farro. -Jean Ecos, Hartland, WI

I'm not a big fan of pumpkin, but this chili was surprisingly good. The pumpkin flavor is subtle and it really complements the other ingredients.

This chili was a bit too spicy for me, but my husband loved it. I'll definitely make it again and use less chili powder.
