Black Bean Pineapple Salad Recipe - (4.2/5) image

Number Of Ingredients 11

4 1/2 cups cooked black beans or 3 (14-ounce) cans, drained and rinsed
2 cups pineapple, chopped
5 stalks green onions, chopped
1 bunch cilantro, chopped
2 sweet red pointed peppers, chopped
3 ears corn, cooked and kernels removed
1/2 cup white or red onion, finely chopped
1/4 cup fresh pineapple juice
1/4 cup white balsamic vinegar
1 tablespoon lime juice
Fresh ground pepper, to taste

Steps:

  • In a big bowl, combine the black beans, pineapple, onions, cilantro, red pointed peppers, corn and red onions; mix well. In a separate bowl, mix together pineapple juice, vinegar and lime juice. Pour over salad and toss. Add fresh ground pepper, to taste. Toss and serve.

I thought this salad was pretty good, but I found it to be a bit too sweet for my taste. I think next time I'll use less pineapple and add some chopped jalapeño for a little spice. Otherwise, it was a great recipe!
