3 ears fresh corn
3/4 cup water
3 tomatoes, peeled and diced
2 (15 ounce) cans black beans, drained and rinsed
2 jalapenos, minced
1 cup chopped fresh cilantro
1/3 cup lime juice
2 firm avocados, chopped finely
salt
pepper

Steps:

  • Cut corn from cob and place in pan with jus enough water to cover.
  • Bring to boil and cook about 5 minutes.
  • Drain.
  • Mix in remaining ingredients and chill.
