I added some corn and bell peppers to the filling. It made the enchiladas even more flavorful.

I'm allergic to gluten, so I used gluten-free tortillas. The enchiladas turned out great!

I'm a vegetarian, so I used tofu instead of cheese. The enchiladas were still delicious!

These enchiladas were a bit too spicy for me, but my husband loved them. I'll probably make them again, but I'll use less chili powder next time.

I had a hard time finding black beans, so I used pinto beans instead. The enchiladas still turned out great!

These enchiladas were a bit bland for my taste. I think I'll try adding some more spices next time.

I'm not a big fan of black beans, but I thought I'd give this recipe a try. I was pleasantly surprised! The black beans were cooked perfectly and the cheese was melted and gooey. I'll definitely be making these again.
