BEST EVER MEATLOAF
Steps:
- Coat bottom of small saute pan with cooking spray. Saute shallots on medium heat until soft and translucent. Mix shallots well with all other ingredients in large bowl. Transfer into large loaf pan that has been coated with cooking spray. Spread top of mixture with remaining ¼ cup ketchup and bake at 350° for 55 min. to an hour.
