Beet Muhammara image

A brilliant red-purple take on the Middle Eastern dip made with walnuts and peppers. We used red beets but Chioggia beets would also make a spectacular dip.

I was a bit hesitant to try this recipe because I'm not a big fan of beets, but I'm so glad I did. The beets add a subtle sweetness and earthiness that really makes this dish.
