I'm a vegetarian, so I made this soup without the beef. It was still delicious! I used vegetable broth instead of beef broth, and I added some extra vegetables to make up for the lack of beef.

This soup is a great way to use up leftover beef. I always have some leftover beef from my Sunday roast, and this soup is a great way to use it up. It's also a great way to get your vegetables in.

I made this soup in my slow cooker and it turned out great. I just threw all the ingredients in the slow cooker and let it cook on low for 8 hours. It was so easy and the soup was delicious.

I'm not a huge fan of barley, but I really enjoyed this soup. The barley is cooked perfectly and it doesn't overpower the other flavors.

This soup is so versatile. You can add or remove ingredients to suit your taste. I like to add some chopped carrots and celery to mine. I also like to add a bit of red wine to the soup for extra flavor.
