1/4 to 1/2 pound lean beef
1 tablespoon soy sauce
1 teaspoon peanut oil
6 cups Stock, Meat or favorite stock
1/2 pound chinese lettuce
3/4 to 1 teaspoons salt
1/2 teaspoon sugar

VARIATION: * For the Chinese lettuce, substitute either alone or in combination: celery, shredded Swiss chard or spinach leaves, cut in half or water cress, cut in 2-inch sections.
