Categories     Cookies

Number Of Ingredients 6

1 c butter, softened
2 c packed brown sugar
2 eggs
1 tsp vanilla extract
1 c chopped pecans
3 c self-rising flour

Steps:

  • 1. Mix together the butter, sugar, eggs and vanilla. Add in the nuts and then work in the flour.
  • 2. Shape into rolls and wrap in waxed paper or plastic wrap and chill in the refrigerator for several hours.
  • 3. Unwrap and cut into thin slices and place onto a greased cookie sheet. Bake at 350 for approximately 10 minutes.
  • 4. HINT: I always line my cookie sheets with aluminum foil then spray the foil. I find this as easy clean-up.

These cookies are so easy to make and they taste amazing! I love that I can use my food processor to make the dough. It's so much faster than creaming the butter and sugar by hand.

I'm not a big fan of pecans, but I still really enjoyed these cookies. The cookie itself is soft and chewy and the pecan flavor is subtle. Definitely a keeper!
