Bea's Morning Glory Muffins image

I found this recipe in a cookbook I borrowed from my friend, Carol. I love all the ingredients this recipe calls for. These are wonderful and hardy muffins and the taste is out of this world. They're so moist and packed with flavor. These are truly my favorite muffins!

Number Of Ingredients 14

2 c all purpose flour
1 1/4 c granulated sugar
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
3 to 4 c peeled & grated apples
1/2 c cranraisins
1/2 c raisins
1/4 c chopped pecans
1/4 c shredded coconut
1/2 c grated carrots
3 large eggs
1 c oil
2 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350. Line 30 to 36 regular size muffin pans with cupcake papers. In large bowl, sift together the first five ingredients. Stir in the next five ingredients and mix well.
  • 2. In a seperate bowl, combine last three ingredients and mix well. Add to flour mixture & stir until blended.
  • 3. Fill liners 2/3to 3/4 full and bake at 350 for approximately 30 to 35 minutes or until done.
  • 4. Note: the recipe states that this will also yield 50-75 miniature muffins. Sometimes I make both sizes which yields approximately 30 regular and 18 to 20 mini muffins.
