BEA'S BANANA SPLIT PIE image

This is such a refreshing pie but be sure to serve small slices because it's really rich and not figure friendly. I've been making this pie for over 35 years and I've never had any complaints.

1 graham cracker pie crust
1 stick butter, room temperature
2 c powdered sugar
8 oz cream cheese, room temperature
1/2 tsp vanilla extract
2 to 3 medium bananas, slightly ripe
10-12 oz crushed pineapple, drained well
1 c chopped nuts (your choice)
8 oz cool whip or whipped cream
1 small jar maraschino cherries
chocolate syrup (optional)

Steps:

  • 1. Cream together soft butter and powdered sugar. Mix in the cream cheese and vanilla and beat with an electric mixer until smooth and creamy. Spread into the bottom of the graham cracker crust and refrigerate for 30 minutes to an hour.
  • 2. Cover with sliced bananas then spoon on the well drained pineapple. Sprinkle the chopped nuts over the pineapple. Cover with cool whip (or whipped cream) and refrigerate for several hours or overnight. My Tip: If using cool whip, stir in a drop of vanilla extract. This makes it taste more like homemade whipped cream.
  • 3. Drain cherries well then cut in half. Place on top of pie then drizzle with chocolate syrup and serve.
