Bean With Bacon Soup image

This recipe evolved with my trying to duplicate the taste of Campbell's Bean with Bacon soup, so I would not have to use canned soups all the time. It comes pretty close. I still find myself using the cans, but this has become a family favorite.

Categories     Bean Soups

Time 2h15m

Number Of Ingredients 9

2 c dry navy soup beans
2 qt water
12 oz bacon, cooked and crumbled
(or use equivalent amount of vegetarian bacon strips)
1 carrot, finely chopped
1 celery stalk, finely chopped
1/2 c onion, finely chopped
1/4 c tomato sauce or ketchup
salt and pepper to taste

Steps:

  • 1. Soak beans 6 hours or overnight. Drain off soaking liquid.
  • 2. Place soaked beans, 2 quarts water, bacon, carrot, and onion in a large soup pot or crock pot. Cook 1 1/2 hours until beans are soft (at least 6 hours on low in crock pot). Add water if necessary to maintain soup-like consistency.
  • 3. When beans are done, stir in tomato sauce, salt and pepper to taste. Heat through about 10 minutes (30 minutes on high for crock pot).
  • 4. Serve with corn bread, or over spoon bread.

This soup was a bit too thick for my taste. I think I will add more water next time.

I made this soup last week and it was delicious! I used smoked bacon, which gave the soup an extra depth of flavor. I also added a few chopped carrots and celery for extra veggies.

This soup was a hit with my family! The bacon added a delicious smokiness, and the beans were hearty and filling. I served it with some crusty bread, and it was the perfect meal for a cold winter night.
