BASIL TOMATO TART image

Yield 4-6 servings

Number Of Ingredients 8

Pastry for 9-inch crust
1 1/2 cups shredded mozarella
5-6 small plum tomatos
1 cup fresh basil
4 garlic cloves
1/2 cup mayonnaise
1/4 cup shredded parmesan
1/8 teaspoon pepper

Steps:

  • Preheat oven to 450 Roll out pastry and press into 9" pan. Bake for 10 minutes. Remove from oven and sprinkle 1/2 cup mozarella over hot crust. Reduce oven to 375. Meanwhile, slice tomatoes and seed. Coarsely chop basil and garlic and mix with remaining 1 cup mozarella, mayonnaise, parmesan and pepper. Arrange tomatoes over cheese in crust. Spoon basil-cheese mixture over tomatoes. Bake at 375 for 20-25 minutes until bubbly. (Variation, spread 1/4 cup dijon mustard over crust before adding cheese)
