Time 55m

Number Of Ingredients 8

4 8-inch flour tortillas
1 c mexican cheese blend
1 can(s) diced green chiles, drained
18 oz refrigerated barbecue sauce
2 c shredded chicken
1 c salsa
1/4 c sour cream
1/4 c sliced green onion

Steps:

  • 1. Take boneless chicken breast, wrap in foil and place in a glass bake pan. Bake for 40 minutes. Shred chicken with two forks and add to barbecue sauce. Spray the tortillas with cooking spray to keep them from sticking to the pan and make them a little crispier. Coat only one side and place (coated side down) on a cutting board or waxed paper. Sprinkle 1/4 cup of cheese over half of each tortilla. Top with green chiles and barbecue sauce with chicken. Fold tortillas in half, pressing gently. Preheat oven to 350. In a hot 10-inch skillet cook quesadillas, two at a time, over medium heat for 6 to 8 minutes or until golden brown, turning once. Place quesadillas on a baking sheet. Keep warm in preheated oven for up to 30 minutes. Repeat with remaining quesadillas. Cut each quesadilla into 3 wedges. Serve with salsa, sour cream, and green onion.
  • 2. Bacon, Tomato, & Avocado Quesadillas: Prepare as above, except substitute cheese for cheddar; use 8 crisp-cooked and crumbled bacon slices, 2 small seeded and coarsely chopped tomatoes, and 1 seeded, peeled, and chopped avocado for the filling. Omit the green chiles, barbecue sauce with chicken, salsa, sour cream, and green onion.

These quesadillas were okay. They weren't great, but they weren't bad either.

I couldn't find any barbecue sauce at the store, so I used ketchup instead. It wasn't quite the same, but it was still good.

These quesadillas were really bland. I think I'll try adding some more spices next time.

The chicken in these quesadillas was a bit dry. I think I'll try marinating it next time.

These quesadillas were a bit too greasy for my taste. I think I'll try using less oil next time.

I'm not a big fan of barbecue sauce, but I still enjoyed these quesadillas. The cheese and chicken were so flavorful that the barbecue sauce didn't overpower them.

These quesadillas are a great way to use up leftover chicken. I always have some cooked chicken in the fridge, so these are a go-to meal for me.

These are the best quesadillas I've ever had! The chicken was so tender and flavorful, and the cheese was perfectly melted. I will definitely be making these again.

I'm not usually a fan of barbecue sauce, but these quesadillas changed my mind. The sweetness of the sauce paired perfectly with the melted cheese and chicken.

These quesadillas were a huge hit with my family! They're so easy to make and the flavor is amazing. I especially loved the smoky flavor from the barbecue sauce.
