Banana Toffee Cream Dessert For Two image

Due to my SO's job,he goes out of town quite often and sometimes I just don't like to eat alot of leftovers. So, I decided to start looking for recipes for just 1 or 2 servings.Time for chilling is cooking time. And this one was found in the 2003 edition of Taste of Home's " The Best Of Country Cooking ". It was sent in to them...

3/4 c whipping cream, whipped ( orginal called for 1/2 cup)
1/2 c english toffee bits
1 large banana,sliced

Steps:

  • 1. Gently fold sliced banana and toffee bits into whipped cream until well blended.
  • 2. Spoon into parfait glasses or dessert dishes,and Cover and refrigerate until ready for serving. ( I recommend at least 2 hours ).

This dessert is a good starting point, but I think it could be improved with a few tweaks. I would add more spices to the toffee sauce and use a different type of banana.
