These are a moist tasty muffin with a cinnamon and brown sugar streusel topping. A great way to use up those ripened bananas! The grand kids love these, especially when I add some chocolate chips! I saved this recipe about five years ago from another recipe site/submitted by Lisa Kreft. My photo!

Steps:
- 1. Preheat oven to 375ยบ. Lightly grease muffin cups or line with papers.
- 2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder, salt and (chocolate chips if using). In another bowl, mix together bananas, sugar, egg and melted butter.
- 3. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups filling about 2/3 full.
- 4. In a small bowl, mix together the brown sugar, 2 tablespoons of flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins. (using about a 1/2 tablespoon per muffin). Bake in preheated oven for 18-20 minutes (mine usually take 23 minutes) or until a toothpick inserted into center of muffin comes out clean.
