Steps:
- Preheat oven to 400. Coat baking sheet with cooking spray. Whisk cornmeal, flour, baking powder, salt, cinnamon, and chipotle in medium bowl. Mix banana, egg and milk in another bowl. Add cormeal to banana and stir just until incorporated. Heat 1 T oil in large nonstick skillet over med-high heat. Reduce heat to medium. Spoon 2 T batter into pan (5 at a time). Cook until golden, 30 seconds to 2 minutes per side. Transfer to baking sheet. When sheet is full, bake until puffed and firm to touch, 8 to 10 minutes. Makes 10 cakes.
